Ingredients

  • 1 medium frozen banana, sliced
  • 3 cups frozen pineapple, about 1.5 pounds 
  • 1/2 cup coconut cream
  • 1/4 cup pineapple juice
  • 2 to 3 teaspoons fresh lemon juice
  • 1/4 teaspoon pure vanilla extract

Instructions

  1. Add the banana, half the pineapple, coconut cream, pineapple juice, lemon juice, and vanilla extract to a 10 to 12 cup food processor. Process until mostly smooth, about 5 minutes, then add the remaining pineapple and continue processing until very smooth and creamy, 2 to 3 minutes longer. If large chunks of pineapple persist, use the pulse function on the food processor and pulse 8-10 times until they break up. Continue processing until smooth. Serve immediately.

Notes

Make it ahead: Eating this fresh gives the best, creamy texture, but you can freeze and enjoy later if desired. I suggest allowing it to melt a bit on the counter – 15 to 20 minutes. And often times, I will use an immersion blender or handheld electric beaters to re-blend and make it less icy.
